We love making breakfast, and we love putting a smile on peoples' faces. One of the many delights that our guests enjoy during their stay with us is our Blueberry Lemon Scone, a favorite from our homemade breakfast at Prairie Guest House. The light crust of cardamom and turbinado sugar gives the scone just the little bit of sweetness expected when biting into the crumbly pastry. The broad spectrum of ingredients ranging from sweet blueberries, ground cardamom, and a hint of tart lemon create a big flavor profile.

The Secret to Our Gluten-Free Blueberry Lemon Scones
We make our scones without the use of wheat flour, and they are 100% gluten-free. Over the years, we have found that wheat flour is our most common allergen among our guests. Instead of wheat flour, we use a store bought variety of gluten-free flour. We have tried several different gluten-free flours and landed on the perfect flour for our scone recipe. I would hesitate to recommend a certain type of gluten-free flour because they each have their own benefits; feel free to use the variety you prefer. You could even try making your own blend of flour!
The biggest challenge we face when using non-wheat flour is successfully creating the texture people expect with typical baked goods. If your palate is strong, some people can taste the flavor difference between wheat flour and gluten-free flour, but most people are more sensitive to the texture difference. Using baking soda, baking powder, adding air, and singing while you bake are all good ways to adjust the texture of your baked goods. We strongly suggest the singing part.
